Peel one of the bananas and place it in a bowl with the chia seeds. Mash together with a fork until they are well combined and a mushy banana, chia seed paste comes together. Stir in vanilla extract and milk until incorporated and no lumps remain in the mixture.
Separate chia seeds mixture into two bowl, then cover one and place it in the fridge.
To the other half, stir in honey and cacao powder until mix well. Cover and refrigerate overnight.
To assemble the parfait, fill the bottom third of a serving bowl with cacao chia, the second third with vanilla chia seeds, place banana slices on the sides, and then the cacao again. Add more banana slices and cacao nibs to the top.
